Aubergine and Goat Cheese Taco
Vegetarian taco with aubergine, goat cheese and sweet chili sauce.

2 kg aubergine
150 g red bell pepper
250 g goat cheese
10 Santa Maria Taco Shells
50 g Santa Maria Taco Spice Mix
300 ml Santa Maria Salsa
300 ml Santa Maria Sweet Chili Sauce
Olive Oil
Fresh coriander
How to prepare
Cut aubergine and peppers into small pieces and season with the spice mix.
Fry the veggies in olive oil and put them in taco shells.
Spinkle the goat cheese and put on some salsa.
Finish with a little sweet chili sauce and fresh coriander.
