BBQ Chicken Taquitos with Ranch Dip

Taquitos
Rub the chicken with the chili rub.
Fry golden in canola oil and put in a big pot. C
over with BBQ sauce and water and simmer under a lid bout 1 hour.
Pull the chicken apart and let cool. Mix with grated cheese.
Roll small cigars with the mixture inside the small tortillas. Place on a baking sheet. Spray lightly with spray fat.
Bake at 200 degrees until golden and crispy, about 8-10 minutes.
Ranch dip
Mix all ingredients, refrigerate.
Assembly
Cover the taquitos with the mixed vegetables and serve with the ranch dip and salsa roja.
