Tandoori Chicken with Raita

Tandoori marinated chicken breasts served with roasted potatoes and raita.

How to prepare

Chicken
  1. Preheat the oven to 180°C.

  2. Cut each chicken breast into 4 pieces.

  3. Put the chicken in a bowl where you also add yogurt and spice mix. Mix well and let marinate for at least 10 min, preferably 1-2 hours.

  4. Place the chicken in a baking dish and bake in the oven at 180°C for 10–15 min, until the chicken has a core temperature of 72°C.

Roasted Potatoes
  1. Place the potato wedges in a baking dish and toss with oil, salt, and thyme.

  2. Roast in the oven for about 30 minutes, until they are soft and golden brown.

Raita

Just mix yogurt, cucumber, and spice mix in a bowl.

Tips!
  • Try adding other veggies to the raita. For example sweet pepper, radish, shredded carrots or kohlrabi.

  • Use already shredded chicken to keep it really simple.
