Chilli Patties with Mashed Potatoes

Chili Patties with Spicy Mash

Chili patties with a lot of umami served with a spicy potato mash.

Ingredients

Chili patties
  • 950 g minced meat, beef or mixed

  • 0.5 dl cream

  • 2 dl milk

  • 2 eggs

  • 1 dl breadcrumbs

  • 90 g onion

  • 1 tbsp soy sauce

  • 1 tsp Santa Maria Black Pepper, ground

  • 2 tsp Santa Maria Chili Explosion

  • 2 tsp salt

Mashed potatoes
  • 1 kg potatoes

  • 2 dl milk, warm

  • 25 g butter

  • 1 tsp salt

  • 2 ml Santa Maria White Pepper, ground

  • 1 ml Santa Maria Nutmeg, grated

  • 2 ml Santa Maria Cumin

  • 2 ml Santa Maria Chilli Powder

Cream sauce
  • 5 dl cream

  • 3 dl milk

  • 2 dl crème fraiche

  • 2 tbsp meat broth powder

  • 2 tbsp tomato puree

  • 2 tsp Santa Maria Chili Explosion

  • 0.5 tsp salt

How to prepare

Chili patties
  1. Mix cream, milk, eggs, onion, salt and spices. 

  2. Add breadcrumbs and let it swell for 15 minutes before adding the meat. 

  3. Wet your hands and make 120 g patties. Put them on a gastro tray. 

  4. Fry the patties until they are nicely coloured. 

  5. Then bake them in the oven at 175˚C until the inner temperature is 70˚C.

Mashed potatoes
  1. Boil the potatoes until they are soft. 

  2. Pour the water out. 

  3. Add milk and butter. 

  4. Whisk to make it smooth and fluffy. 

  5. Add salt, white pepper and other spices. 

Cream sauce
  1. Mix cream, milk, crème fraiche, broth powder and tomato puree. 

  2. Add salt and Chili Explosion. 

  3. Let it reduce a little bit.

Tips

Oat bran add more fibres and a nice texture.
