Chorizo with coleslaw and BBQ sauce

Spicy sausage made of pork and beef, flavoured with oregano, garlic and smoked paprika. Served as a fiery sausage with bread in a grilled sourdough baguette filled with bbq sauce.

Sausages
  • About 10 Chorizo á 120 g

  • 500 g loin of pork

  • 500 g chuck steak

  • 20 g salt

  • 20 g smoked paprika powder

  • 4 g Santa Maria Oregano

  • 4 g Santa Maria Garlic Powder

  • 2 g Santa Maria Cayenne Pepper

  • 2 g Santa Maria Tellicherry Black Pepper

  • 1 lemon, zest & juice

  • 200 ml white wine

Coleslaw
  • 2 carrots, finely shredded

  • 1 small cone cabbage, finely shredded

  • 5 tbsp mayonnaise

  • 1 tsp caraway

  • 1 tbsp Dijon mustard

  • Salt & Tellicherry Black Pepper

How to prepare

Follow the procedure in basic recipe for sausage, but replace the spices to the ones of the chorizo recipe. And replace the water with white wine and lemon.
