Fish and Root Crop Paneng

How to prepare
Preheat the oven to 120°C.
Mix water, coconut cream, and Panang Spice Mix in a saucepan or pot. Bring to a boil and stir well. You can use an immersion blender to achieve a smooth sauce.
Add the carrots, parsnip, rutabaga, and onion to the saucepan. Let them simmer until they are tender, approximately 15 min.
Meanwhile, prepare a greased baking dish with the fish. Lightly sprinkle salt over the fish. Pour the coconut sauce mixture over the fish and bake in the oven at 120°C for approximately 20-25 min and make sure the fish is fully cooked.
Tips!
Try skipping the fish and the final cooking step. Instead put the paneng veggies in a blender and make lovely soup.
Swap the fish for chickpeas for an all vegan take.
There are usually more expensive veggies in a paneng. But any affordable root crop will do here!
