Hot wings with rocket and herb salad

Ingredients

Wings
  • 1.2 kg Chicken wings

  • 50 ml Canola oil

  • 300 ml Santa Maria Bourbon BBQ Sauce

  • Santa Maria Tellicherry Black Pepper (for grilling)

  • Santa Maria Rock Salt (for grilling)

Serve with
  • 300 ml Santa Maria Ranch Style Topping on the side

Salad
  • 500 g Rocket salad

  • 50 g Pea shoots

  • 20 g Shallots, peeled and chopped

  • 50 g Radish

  • 20 g Mixed herbs, coriander, basil & flat-parsley

  • Santa Maria Lime Pepper, grinder to garnish

  • Some olive oil to drizzle

How to prepare

  1. Fry or grill the wings at 170 °C gas mark 4 until cooked through.

  2. Season with salt and pepper.

  3. Glaze with Bourbon BBQ Sauce.

  4. Wash and cut lettuce, coarsely slice the radishes, chop the herbs, mix together and season liberally with lime pepper grinder.

  5. Drizzle a little olive oil over.
