Indian burrito with raita dip

How to prepare

Curry
  1. Fry the chicken on medium heat until golden and cooked through, set aside.

  2. Fry the onion in some oil on medium heat until translucent, add the chicken.

  3. Add the masala spice mix and tomato paste and fry about 1 minute.

  4. Pour over the taco sauce and water and simmer until thickened, about 15 minutes.

  5. Season with lemon juice and salt.

Raitadip
  1. Mix and set aside.

Flavored basmati rice
  1. Rinse the rice until water runs clear.

  2. Place all ingredients in an ovenproof dish and mix.

  3. Steam under lid approximately 20 minutes.

Assembly
  1. Place a heap of the rice in the middle of the tortilla, some fresh spinach, onion, a big spoonful of the curry and top with mango chutney.

  2. Fold in the sides and roll as tightly as possible. Serve with the raitadipp.
