
Tabbouleh
A super salad with bulgur with a taste of both fresh and dried spices. The recipe is adapted for restaurants offering guests hors d´oeuvres.

400 ml bulgur
800 ml parsley, roughly chopped
200 ml mint leaves, roughly chopped and tightly packed
200 ml olive oil
200 ml freshly squeezed lemon juice
1 tsp Santa Maria Allspice, ground
1 tsp Santa Maria Cinnamon, ground
8 tomatoes, de-seeded and chopped
2 red onions, finely chopped
1 tsp Santa Maria Rock Salt, to taste
1 tsp Santa Maria Tellicherry Black Pepper
{1/2} Pomegranate, seeds
How to prepare
Boil the bulgur according to the instructions on the package.
Mix all the ingredients in a bowl and allow to stand for 10 minutes before serving.
Use serving dishes and garnish with pomegranate seeds.
