Baja Burgers are bursting with flavour, Baja California in Mexico is the second longest peninsula in the world and is famous for its food leading the way in the latest flavour trends. In this recipe, we have combined the flavours of Mexico with a vegan burger, and we have used our Chipotle paste to give our most popular salsa a kick! Our Chipotle paste is made from dried and smoked Chipotle Chilli from Mexico it's so versatile it can be used in most dishes to pack in extra flavour.

  • 1 Burger bun

  • 1 Plant based burger

  • 2g Santa Maria Mexican Fajita Seasoning

  • 20g Vegan mayo

  • 20g Spiked salsa

  • 10g Vegan Monterey Jack

  • 20g Pickled Red Onion

  • 30g Santa Maria Avocado Slices

  • 10g Lettuce

Spiked Salsa (makes 10 portions)

  • 180g Santa Maria Salsa

  • 20g Santa Maria Chipotle Paste

Pickled Red Onion (makes 10 portions)

  • 190g Sliced Red Onion

  • 10g Santa Maria Pickling Spice Mix

How to prepare

Here are our quick and simple steps to recreate this dish:

  • Mix salsa with chipotle paste, mix the red onions and pickling spice leave to one side for 20mins.

  • Cook burger as per instructions and season with fajita.

  • Top with cheese. Toast bun.

  • To build add a layer mayo, lettuce, burger, avocado slices, salsa, onion.
