Classic Pulled Pork

Super tender pulled pork served with chipotle sauce in wheat tortillas.

Ingredients

  • 1.2 kg boneless pork roast

  • Santa Maria Rock Salt, to rub the meat

  • Santa Maria Tellicherry Black Pepper, to rub the meat

  • 300 ml Santa Maria Bourbon BBQ Sauce

  • 500 g lettuce

  • 2 beefsteak tomatoes, sliced

  • 10 Santa Maria Tortillas 12”

  • 200 ml crème fraiche

  • 300 ml Santa Maria Chipotle Sauce

  • 100 g Santa Maria Nacho Chips, crushed

  • 4 medium red onions

  • 300 g romaine lettuce

  • Fresh coriander leaves to garnish

How to prepare

  1. Preheat the oven to 100 °C.

  2. Rub the meat with salt and pepper. Coat it with BBQ Sauce, then seal in a frying bag or a vacuum bag.

  3. Put the meat in a covered oven-proof dish. Cook slowly for 9 hours. When meat is done it should fall from the bone and be easily pulled apart with two forks.

  4. Put approx. 120 g pulled pork on each tortilla. Add crème fraiche and salad.

  5. Finnish with chipotle sauce, crushed nacho chips and chopped coriander leaves.
