
Gunpowder Chicken & Masala Fries
Ingredients
Half tikka masala chicken
500 g Chicken
25 g Santa Maria Tikka Masala Spice Mix
Fries
200 g Fries
5 g Santa Maria Tikka Masala Spice Mix
40 g Masala slaw
35 g Pink sauce
30 g Pickled cucumber
2 g Coriander
For Masala slaw
150 g Red cabbage, sliced
150 g Green cabbage, sliced
150 g Carrot, sliced
150 g Red onion, sliced
20 g Coriander, chopped
15 g Santa Maria Pickling Spice
20 g Santa Maria Garam Masala Spice Mix
For Pink sauce
100 g Plain yoghurt
50 g Tomato ketchup
5 g Mint sauce
1 g Chilli
¼ Lemon
Salt
5 g Beetroot powder
How to prepare
Rub tikka masala spice mix into chicken thoroughly and oven roast until 75°C core temperature
Cook fries and season with tikka masala spice mix in a bowl before serving
Serve with accompaniments on the side of chicken and fries and garnish with coriander
