
Tandoori Smashed Lamb Burger
Ingredients
1 Brioche burger bun, toasted
25 g Raita yoghurt
40 g Masala slaw
1 Lamb Smash Burger
1 Homemade onion bhaji
25 g Tandoori mayo
25 g Pickled cucumber
For Raita Yoghurt
100 g Plain yoghurt
10 g Santa Maria Raita Seasoning
For Masala slaw
150 g Red cabbage, sliced
150 g Green cabbage, sliced
150 g Carrot, sliced
150 g Red onion, sliced
20 g Coriander, chopped
15 g Santa Maria Pickling Spice
20 g Santa Maria Garam Masala Spice Mix
For Onion Bhaji
200 g Brown onion, sliced
15 g Santa Maria Tikka Masala Spice Mix
10 g Coriander
100 g Gram flour
75 ml Water
1 tsp Bicarbonate of soda
For Tandoori Mayo
100 g Mayonnaise
5 g Santa Maria Tandoori Spice Mix
How to prepare
On the burger bun base add raita, slaw, lamb burger (which has been tossed in Tandoori Spice Mix)
Top with onion bhaji, tandoori mayo and pickled cucumber
Garnish with bhujia
