Santa Maria Mac Daddy Smash Burger

The Mac Daddy Smash

Mac & Cheese is the perfect comfort food, in this recipe we have combined it with pulled beef and a bourbon BBQ sauce to make this decadent and satisfying Mac & Cheeseburger perfect for that feel good food. We have used our Santa Maria Cheddar cheese sauce to make this recipe, however our Cheddar cheese sauce is so versatile it can be used as an ingredient like a bechamel as well as for topping and dipping.

  • 1 Seeded brioche bun

  • 1 Beef Burger smashed

  • 2g Santa Maria Steakhouse Rub

  • 70g Beef Barbacoa

  • 80g Mac & Cheese

  • 25g Santa Maria Bourbon BBQ

Beef Barbacoa (makes 10 portions)

  • 800g Braising beef

  • 20g Santa Maria Chipotle Paste

  • 15g Santa Maria Beef Brisket Rub

  • 400ml Beef stock

  • Lime

Mac & Cheese (makes 10 portions)

  • 800g Cooked macaroni

  • 400g Santa Maria Cheddar Cheese Sauce

  • 75g Cream

  • Santa Maria Tellicherry Black Pepper

  • 100g Grated cheese

How to prepare

Ingredients prep

  • In advance make the pulled beef and the Mac & Cheese.

  • Smash the burger and season with steakhouse rub.

  • Toast bun and build as follows - burger, Mac & Cheese, pulled beef and top with Bourbon BBQ Sauce

Beef Barbacoa prep

  • Marinate the beef in Chipotle Paste, beef stock, lime juice, beef brisket seasoning ideally
    overnight but for at least 4 hours.

  • Cover and cook at 160oC for 4 hours until tender.

Mac & Cheese prep

  • Cook the macaroni for 2 minutes less than packet instructions.

  • Drain and mix in cheese sauce and cream.

  • Season.

  • Place in an oven proof dish and top with cheese.

  • Bake for 20 minutes or until golden.
