Veggie Taquitos

Crispy tortilla rolls stuffed with mushrooms, cheese and a variety of vegetables.

How to prepare

  1. Heat the oven to 200 degrees.

  2. Prepare and cut the vegetables.

  3. Heat oil in a skillet or griddle. Add the vegetables and fry until slightly browned and soft then add the Burito spice mix and stir. Then put aside.

  4. Distribute the vegetables and the shredded cheese in a straight line in the middle of the tortillas. Then roll tightly to a tube. Repeat until all tortillas are done. Put the rolled tortillas on a ovenplate and brush with oil.

  5. Cook the taquitos for about 10-15 minutes until they are browned and crispy.

  6. Serve in a tray topped with, shredded lettuces, salsa, sourcream and slices of radishes and spring oinions.

Tips Try replacing the zucchini with asparagus
