Waste-minimising Burrito

How to prepare
Preheat the oven to 175°C.
Fry the ground beef in a pan until fully cooked. Add Santa Maria Spice Mix and stir until all the meat is coated.
Add the grated potatoes and carrots and cook for another 10 minutes until everything is soft. Add beans, rice, salsa and corn. Then stir until everything is mixed.
Heat the tortillas either in a microwave or in the oven according to the instructions on the pack.
Put a spoonful of the filling onto each tortilla and fold the towards the middle before rolling it tightly.
Arrange the burritos closely together in a baking dish and brush them with a little oil.
Bake in the oven for about 15 min, until the tortillas are golden and crispy.
Serve with sour cream, salsa, and jalapeños.
Tips!
This is a perfect way to use up leftover ground beef or other meats, slightly wilted vegetables or leftover rice from the freezer. Let your imagination guide you and get creative with the fillings!
