Avocado Rainbow Bowl

Ingredients

  • 500g Fajita Cauliflower

  • 300g Lettuce

  • 300g couscous

  • 300g Beetroot, cubed

  • 400g Tomato, diced

  • 200g Mixed Peppers, sliced

  • 100g Radish, thin sliced

  • 500g Santa Maria Avocado Slices

  • 100g Spring Onion - chopped

  • Dressing

How to prepare

  • For the fajita roasted cauliflower season 500g small cauliflower florets with 20g Santa Maria Fajita Seasoning and a little oil.

  • Roast at 180c for 20 minutes

  • Serve hot or cold.

  • Add defrosted Avocado Slices to your Rainbow Bowl.

TOP TIP: We recommend you defrost the slices carefully by putting them in the fridge overnight.
