  • 1 50/50 Burger

  • 30 g Jerk mayo

  • 40 g Pineapple Salsa

  • 30 g Santa Maria Guacamole

  • 30 g Pickled slaw

  • 20 g Santa Maria Piri Piri Sauce

Jerk mayo (makes 10 portions):

  • 300 g mayo

  • 10 g Santa Maria Jaimican Jerk Seasoning

Pineapple salsa (makes 10 portions):

  • {100 g red onion, fine dice

  • 150 g red pepper, fine dice

  • 300 g pineapple, fine dice

  • Coriander

  • Lime

Pickled slaw (makes 10 portions):

  • 120 g White Cabbage

  • 120 g Red Cabbage

  • 50 g Onion

  • 10 g Santa Maria Pickling Spice

  • 5 g Coriander

  • Santa Maria Tellicherry

How to prepare

  1. Combine the ingredients to make to slaw, Jerk Mayo, and Pineapple Salsa in advance.

  2. Cook burger as per instructions.

  3. Toast bun.

  4. To build the burger smear on the Mayo, Slaw, Guac, Burger, Piri Piri and Salsa.
