70g Fried chicken
50g Santa Maria Korean BBQ sauce
70g Kimchi slaw
30g Sriracha mayo
5g Santa Maria Wasabi & Sesame
Sriracha mayo (makes 10 portions):
150 g mayo
150 g Santa Maria Sriracha Sauce
Kimchi (makes 10 portions):
250 g Sliced Red Cabbage
250 g Sliced White Cabbage
150 g Grated Carrots
150 g Red Onion, sliced
15 g Santa Maria Kimchi spice mix
How to prepare
In advance make Kimchi Slaw and Sriracha Mayo.
Cook fries and chicken as per instructions.
Season with Red Chili and Ginger.
Load up the Fries with Chicken, Slaw, Korean BBQ sauce and Sriracha Mayo.
Garnish with Wasabi and Sesame and Coriander.
