Pork Carnitas Burrito

Carnitas, literally meaning "little meats", is a dish of Mexican cuisine that originated in the state of Michoacán. Carnitas are made by braising or simmering pork in oil until tender. We have created this recipe with a side of Tomatillo Salsa Verde. The sweet flavours of the salsa work perfectly with the smokiness of the pork. Perfect for a Restaurant.

Pork Carnitas Burrito

  • 10 Santa Maria Grill Mark Flour Tortilla Wrap

  • 800g Pork Carnitas

  • 1000g Rice

  • 1000g Pit Beans

  • 600g Corn Salsa

  • 400g Santa Maria Chipotle Sauce 890g

  • 500g Slaw

Pork Carnitas

  • 70ml Cooking oil

  • 2kg Pork Shoulder

  • 100g Santa Maria Pork Carnitas Seasoning 520g

Tortilla Salsa

  • 500g Finely Diced Onion

  • 1000g Tomatillo Chopped

  • 150g Santa Maria Green Jalapenos 500g

  • 1 Lime

  • Chopped Coriander

  • Santa Maria Tellicherry Black Pepper 210g

How to prepare

  • Marinade your pork preferably overnight but for at least 4 hours 

  • Cook at 160 ⷪc for 5 hours until pullable and tender 

  • To make the tomatillo salsa, dice the onion, tomatillo, Jalapeños, mix the juice of 1 lime 

  • Season with coriander and Tellicherry Pepper 

  • Warm your Tortilla 

  • Add the rice 

  • Add the pork carnitas 

  • Add the corn salsa 

  • Add the slaw 

  • Drizzle over the Chipotle Sauce 

  • Fold your Burrito and serve
