500 g sweetcorn
2 tbsp vegetable oil
40 g Santa Maria Chili Rub
How to prepare
Finely slice the scallions.
Cut the zucchini into small dices.
Fry the corn in oil over high heat until it’s nicely coloured, about 5 minutes.
Add the zucchini, scallions and Chili Rub and fry for another 5 minutes.
