4 steps for better milk foam
- Step 1: Before steaming
Before steaming you need to check a few points:
your milk needs to be cold
your pitcher needs to be rinsed from previously steamed milk
decide whether you want to have latte milk or cappuccino milk. For cappuccino milk you need to create more foam
- Step 2: Create foam
Keep steam wand below the surface
Turn steam wand on
Gently lower your milk pitcher to create air (= foam) on top of your milk. After few seconds rise your pitcher for not to get more foam
You must get a whirlpool to your milk, so all the bubbles will mix up smoothly with your milk
- Step 3: The correct temperature
Make sure your milk temperature is 60-65 C
- Step 4: Mix the milk and pour asap
Keep the milk moving by rotating the pitcher. Otherwise, your foam will separate from the milk. With rotation you also make your milk shinier.
Don’t forget to wipe the steam wand!
Here are 3 tips that will make your latte art flourish
Slow things down – just a few seconds. If we pour too fast, we don’t have time to see what happens in our cup!
First the base, then the art. We want the base to be golden and brown and art to be shiny and white.
Lean your cup – Get closer to the surface to make the art stay in your coffee.
How to pour a heart?
Step 1: First make the base. Pour from 5-10 cm high so all white will go below surface. Pour straight to the center of the espresso.
Step 2: When your cup is about 40% full, start to make your art. Now you need to get really close to the surface ( ~0,5 cm ). LEAN your cup!
Step 3: Remember to straight your cup when pouring more milk. When your cup is almost full, go up (still slowly pouring the milk) and front to make the heart shape.
Step 4: Beautiful heart in the center of the full cup with nice contrast! Just ready to make your customer happy!
