Coffee Marinated BBQ Chicken Tacos

Is it a burger, is it a taco? Well, who cares! Your chicken has never been more racy indulged in coffee spiked marinade and topped with a hot pineapple salsa.

Ingredients

Number of portions
  • 10 portions of bread, like ciabatta or brioche.

Marinade
  • 16 boneless chicken thighs

  • 5 dl strong, cold coffee

  • 4 tbsp brown sugar

  • 4 tbsp Santa Maria Oregano

  • 2 tbsp Santa Maria Cumin

  • 4 Santa Maria Bay leaves

  • 1 finely-chopped yellow onion

  • 2 tbsp concentrated orange juice

  • 2 limes, juice from

Pineapple salsa
  • 10 dl finely-chopped fresh pineapple

  • 1 dl finely-chopped red onion

  • 1 dl finely-chopped red or green

  • Santa Maria Jalapeño

  • 1.5 dl finely-chopped fresh coriander

  • 1.5 dl lime juice

  • 4 tbsp apple cider vinegar

  • 1 tsp salt

BBQ-sauce
  • 2.5 dl cooking broth from the chicken

  • 1.5 dl ketchup

  • 2 tbsp apple cider vinegar

  • 1 dl Santa Maria Chipotle Paste

  • salt

How to prepare

Marinade
  1. Mix all the marinade ingredients and marinate the chicken for at least 5-6 hours.

  2. Pull out the chicken and wipe it dry.

  3. Save the marinade.

  4. Brown the chicken and pour the marinade over it.

  5. Simmer for about 10-15 minutes and allow to cool.

  6. Once the chicken is cool, pull it apart using two forks or cut it into cubes.

  7. Mix with the BBQ sauce (see recipe below) until it is as saucy and spicy as desired.

Pineapple salsa
  1. Mix all the salsa ingredients and let the salsa stand for about 20 minutes before serving.

BBQ-salsa
  1. Whisk together all of the ingredients of the sauce and season with salt and pepper.

Place the chicken in a portion of bread together with your choice of lettuce. Top with salsa. The chicken can also be heated in the BBQ sauce and served hot!
