Kafta on skewer

Small Lebanese minced meat skewers with exciting flavours, for commercial kitchens and restaurants.

Ingredients

  • 100 g minced meat

  • 2 tbsp Santa Maria Parsley

  • 150 g Santa Maria Sun-dried tomatoes

  • {1 ¼} tbsp Santa Maria Red Hot Chilli Flakes

  • 1 tsp Santa Maria Allspice, ground

  • 2 tsp Santa Maria Mint

  • 2 tsp Santa Maria Cumin, ground

  • 1 tsp Santa Maria Cinnamon, ground

  • 1 onion, grated

  • 1 tsp Santa Maria Rock Salt, to taste

  • 1 tsp Santa Mara Tellicherry Black Pepper

How to prepare

  1. Mix minced meat, parsley, tomatoes, chilli, allspice, mint, cumin, coriander, cinnamon, onion, salt and pepper in a large bowl.

  2. Form the smooth meat paste around one end of the skewers, around 40 grams on each.

  3. Grill for 4 minutes until nicely grilled on the surface; turning now and again.
