Chocolate-coated Chips

Crunchy tortilla chips dipped in chocolate and spiked with a dash of ancho chili.

Ingredients

  • 400 g semi-sweet chocolate, finely chopped

  • 240 ml heavy cream

  • 80 pcs Santa Maria Tortilla Chips

  • Santa Maria Chili Pepper Ancho

How to prepare

  1. Place chopped chocolate in a medium heatproof bowl.

  2. Over medium heat, heat cream in a small saucepan until it begins to gently simmer. Don’t let it come to a boil – that’s too hot!

  3. Pour cream over chocolate, then let it sit for 2–3 minutes.

  4. Stir until the chocolate pieces are melted through completely.

  5. Set oven to 175 °C.

  6. Place tortilla chips in a single layer and bake for 5–7 minutes until crispy.

  7. Using tongs, gently dip each chip in the chocolate ganache.

  8. Place chips on a prepared tray lined with wax paper.

  9. Pop in the refrigerator for 20 minutes to firm up chocolate.

  10. Then, sprinkle some ancho chili powder on top of the chips.

Tip! Feel free to experiment with flavours. Cocoa chili powder or a bit of cayenne will also give a nice kick.
