Tavuk skewer

Chicken on a skewer with a fresh marinade and flavoured with mint. A recipe for restaurants offering guests light meals.


Number of portions
  • 150 g rapeseed oil

  • 4 tbsp Santa Maria Mint

  • 2 tbsp Santa Maria Red Hot Chilli Flakes

  • 1 tbsp Santa Maria Thyme

  • 4 tbsp tomato purée

  • 2 tbsp Santa Maria Tellicherry Black Pepper

  • Santa Maria Rock Salt, to taste

  • {1,2} kg de-boned chicken thighs without skin, sliced into pieces

How to prepare

  1. Mix oil, mint, chilli flakes, thyme, tomato puree, black pepper and salt in a bowl.

  2. Add the chicken and mix well. Cover with plastic foil and let it rest in the fridge for up to two hours.

  3. Remove the chicken from the marinade and assemble the skewers.

  4. Fry on the grill or in a frying pan for 12–15 minutes until the chicken is ready,; turning the skewers if needed during cooking. Serve!
