Game Burger with Hot Cabbage Salad

Lovely game burger with hot cabbage salad and fried onions.

Ingredients

Burgers
  • {1,2} kg game mince

  • 4 egg yolks

  • 200 ml Santa Maria BBQ Sauce Bourbon Whiskey

  • 50 ml olive oil

  • 10 brioche buns

  • 10 bacon rashers

  • Santa Maria Rock Salt

  • Santa Maria Tellicherry Black Pepper

Cabbage salad
  • 450 g cabbage, shredded

  • 200 ml crème fraiche

  • 100 ml Santa Maria Chipotle Sauce

Fried onions
  • 4 red onions

  • 2 shallots

  • 3 garlic cloves

  • 100 ml Santa Maria Bourbon BBQ Sauce

  • 100 g butter

  • Santa Maria Triple Pepper 235 g

How to prepare

  1. Mix the mince with oil, BBQ sauce, spices and egg yolks. Make 10 patties and fry them. Also fry bacon rashers.

  2. Mix the cabbage salad and put in the fridge.

  3. Fry roughly chopped onions, shallots and garlic in butter and Triple Pepper.

  4. Add some BBQ sauce let it get warm.

  5. Put the patties, onion mix, bacons in the buns.

  6. Serve with the cold cabbage salad.
